So this is a recipe that actually came with our Christmas season veggie box. We were given some complimentary dried chillies for decoration and within their container there was this recipe titled “Twelfth Night Oil.” I know it’s a little late, but compared to how regularly we do other things It’s actually pretty swift of us.
It’s actually all explained there, but pictures make everything better. We used the trusty pestle and mortar to crush our chillies.
We added them to the pan (of more than 450ml of oil. I think it was roughly 800ml in the end. Didn’t want it to actually be too strong.)
Then we added them to the containers we had chosen. Honestly I felt the funnel was a silly idea, unless it was just because ours was so skinny. The crushed chillies blocked it up and just sat there instead of joining the party. Once we got that sorted we put the m on the side to cool before sealing them up nicely. And hey presto! Fermenting chillies. Or…infusing…if you prefer.
