This is very similar to the almond butter recipe which has a recipe review HERE. Obviously, it uses cashews instead of almonds, but instead of the salt it uses vanilla powder. It’s made in the same way, roasting the nuts, then adding them and the vanilla powder to the blender.
I would just like to point out that I used 1 and 1/2 of the recipe so that’s more vanilla powder than you’d use if you were making it exactly. When you blend it it will go to powder pretty quickly, then it’ll stick itself into a big ball and roll about the place, possibly sticking to one side for a time, too. I kept turning it off and poking it with a spoon to break it up. You want to keep going till you get a runny consistency, roughly 5 minutes after the ball has unformed itself.
I’m not sure about this one. I love vanilla so I thought this may make this one nicer than the almond butter, but I’m not sure, it seems far stickier. I’m not sure if it needed a little salt or if I didn’t put in quite enough vanilla powder, the flavour is delicate and I was expecting it to be a little more forceful I think.
I’ve made a nice big jar of it though, so I’ll put it on and in different things and give you an update in a week or two!
